Prize Amish Country Soup Recipes

INGREDIENTS:

8 slices lean bacon
1/4 cup celery, chopped
1/2 cup onions, chopped
3 cups potatoes, cut into 1 inch cubes (3 medium)
2 1/2 cups water
1 (12 ounce) can evaporated milk
1 tablespoon worcestershire sauce
2 tablespoons parsley, minced
1/4 teaspoon pepper
1/4 teaspoon celery salt
1 bay leaf

DIRECTIONS:

Chop bacon.
Saute’ bacon, celery and onion in a deep sauce pan.
(I drain the fat before going on to the next step, but the recipe doesn’t call for it).
Add potatoes, water, bay leaf, salt, pepper and celery salt and bring to a boil.
Reduce heat, cover and let simmer for 15 minutes or until potatoes are tender.
Mash lightly, leave about 1/4 whole.
Remove bay leaf and add milk, worcestershire sauce and parsley.
Bring to a boil.

— Amish Cabbage Soup —

INGREDIENTS:

2 tsp. unsalted butter
3/4 head cabbage, chopped, or 1 bag prepared coleslaw mix
1-1/4 carrots, finely chopped
3/4 onion, finely chopped
1-1/4 celery stalks, finely chopped
2 potatoes, finely chopped
1-1/4 tsp. parsley flakes
2 cups chicken stock
3/4 can cream of celery soup
3/4 can cream of broccoli soup
2/3 cup sour cream

DIRECTIONS:

Melt butter in a heavy stockpot over medium high heat. Saute next 6 ingredients 8-10 minutes, or until softened. Stir in stock, cream soups and salt and pepper to taste. Reduce heat to low and simmer 15-20 minutes, or until vegetables are tender. Remove from heat and stir in sour cream.

— Customary Amish Chili Soup —

INGREDIENTS:

1 1/2 pounds sausage
1 medium onion, chopped
3 cups tomato juice
1 can kidney beans
1 tablespoon chili powder
1/4 to 1/2 cup brown sugar
Salt to taste
2 to 3 tablespoons flour
Spaghetti

DIRECTIONS:

Brown sausage and onion in a deep pot. Add remaining ingredients, except spaghetti, stir well, and bring to a boil. Add some spaghetti to the soup. Cook until spaghetti is done, about 5 to 10 minutes over medium-high heat.

— Amish Home Style Chicken and Corn Soup —

INGREDIENTS:

1/2 Stewing hen or fowl;
2 quart Chicken stock or broth
1/4 cup Onion; coarsely chopped
1/2 cup Carrots; coarsely chopped
1/2 cup Celery; coarsely chopped;
1 teaspoon Saffron threads; (optional)
3/4 cup Corn kernels; (fresh/frozen)
1/2 cup Celery; finely chopped
1 tablespoon Parsley; fresh chopped
1 cup Egg noddles; cooked

DIRECTIONS:

Combine stewing hen with chicken stock, coarsely chopped onions, carrots, celery, and saffron threads. Bring the stock to a simmer. Simmer for about 1 hour, skimming the surface as necessary.

Remove and reserve the stewing hen until cool enough to handle; then pick the meat from the bones. Cut into neat little pieces. Strain the saffron broth through a fine sieve. (Note: The soup can be made through this step in advance. Simply refrigerate broth and diced chicken meat for 2 to 3 days, or freeze the broth and the chicken meat in separate conveniently sized containers. Be sure to label and date them. To use, defrost, remove congealed fat, return the broth full boil, and add the diced meat. Continue with recipe.)

Add the corn, celery, parsley, and cooked noodles to the broth. Return the soup to a simmer and serve immediately.

Celebrating The Greek Salad – Leave It Be!

Do you know, if you ‘Google around a bit’ or engage in a bit of ‘Binging’ you quicky become aware of just how many interpretations of the famous greek Salad there are out there.

Its quite amazing. there are ingredients I have never heard of – one American recipe called for either mayo (God forbid!) or something with the horrendous name of ‘Miracle Whip’. Then its goes on to plonk a potato salad in the middle of what no Greek would recognise as a Greek salad. Those who know me are familiar with my rants and opinions on food, and may have been expecting ne to applaud this shocking behaviour. Well, read on and see.

In Greece the humble ‘Horiatikisalata’ – Peasant or village salad (what we all know as Greek Salad) is enshrined in law. Put too few olives or miss a few grams of feta and you could get a fine. No really. I think it’s the same if you put some other foreign ingredient too. Shifty taverna owners like sometimes to ‘bulk’ the salad out with cheap lettuce or white cabbage. Well, they are on a days outing to the magistrates court if they get discovered or complained about.

There is a good reason for this, in my opinion. Although I rarely stick to a recipe when cooking and I am one to suggest that sometimes ‘traditional’ can be improved upon and, why not? All traditions have to start somewhere and why not with you? But in the case of the Greek salad, I will defend it to the hilt.

Why? Because it’s about as damn perfect a salad as you could hope for. A rarity for Greek cuisine, it has a dish which is up there with the greats; Nicoise and Caesar spring to mind. The Greek Salad done well with perfectly ripe ingredients, plump, shiny black olives and dark green peppery Cretan olive oil is a fresh tasting, light yet filling salad which shouldn’t just be resigned to side dish status. The uncommon way all the ingredients compliment each other is wonderful, right down to the juice left at the bottom of the bowl – a heady mix of tomato juices, bits of onion, little bits of feta, vinegar and, of course, Greek olive oil. On a hot summers day it’s a lazy lunchtime treat with a couple or three glasses of retsina followed by a snooze under the shade of a tree. For me, the most perfect place to enjoy this dish is at the Calypso Restaurant in Paleochora, a small town in south west Crete. Here they get it just right. Greek Salad at its best!

For the record,this is the perfect and legal Greek Salad. Nothing left out, nothing added in: Cucumbers, tomatoes, sliced onion, sliced green pepper, black olives, feta cheese, oregano, a dribble of vinegar and some healthy glugs of the best olive oil you can find (Cretan, naturally).

Oh, and half a loaf of bread for the juices at the bottom!

The History Of Vandaloo

Vindaloo is an Indian dish with a rich historical tradition. Modern day Vindaloo is a type of curry that was created from the Portuguese dish “Carne de Vinha d’Alhos.

Literally the words mean meat (carne) in wine (vinha) and garlic (alhos). The dish was originally brought to Goa by the Portuguese after the establishment of the Portuguese India beginning in 1498. Although the Hindi word for potato is “aloo,” the dish is never cooked with potatoes. This tradition might be in deference to the historical origins of the food. Were the dish cooked with potatoes, it might obscure the true origins of the name of the dish.

While the culinary creation was originally popularized as fish or pork in wine and garlic, Indian Vandaloo almost never serves it with either fish or pork, preferring lamb instead. Vandaloo is usually one of the spiciest dishes on Indian restaurant menus, in keeping with Goan tradition.

Fats – Low fat diet increases insulin binding and also reduces LDL and VLDL levels and lowers the incidence of atherosclerosis which is more common in diabetics. Fat content in the diet should be 15-25% of total calories and higher in polyunsaturated fatty acids.

Dietary Fiber – Diets high in carbohydrate and fiber improve glucose metabolism without increasing insulin secretion. They lower fasting serum and peripheral insulin concentrations in response to oral glucose administration in both diabetic and non-diabetic individuals. Chaikhana Of Blue Bell, Pa. Attracts Regional Attention

They are a small restaurant, in a tiny town in Pennsylvania, but Chaikhana Indian and Pakistani Restaurant is attracting regional attention. The restaurant reviews tell the story of customers who are happy to travel as long as 1/2 hour to taste the high quality Indian and Pakistani cuisine. Here’s what one customer had to say: “Many restaurants boast of having great food – but this place really lives up to its rave reviews.

Each time I’ve been here (after a 35 minute drive well worth taking)…”

Some of the customers favorably compared the fare in the restaurant to the food found in Indian and Pakistani eating establishments in nearby Philadelphia.

I would highly recommend this place – in my opinion, this is the finest Indian/Pakistani restaurant in Philly and the area.” But amazingly, these two customers weren’t the only two patrons who felt this way. Another diner wrote that: “My wife and I have tried 21 Indian restaurants in the Philadelphia region and by far the food at Chaikhana comes closest to the real deal.”

One thing that makes this restaurant so special is the cooking and personality of the owner/chief Kamran Khan. Kamran cam by cooking naturally, while studying at a Univeristy in America. He got homesick for traditional Pakistani cooking, and so he went out and bought a cookbook and began trying the various dishes. He soon started getting compliments from his friends, who enjoyed his creations. As the compliments built up, he must have thought about becoming a chief. What finally did the trick was a five year stint as volunteer chef for public broadcast TV fundraisers. Every year, he got so many compliments for his cooking that he knew he could succeed in the restaurant industry. Kamran describes his cooking as a blend of French influence with traditional Pakistani and Indian cooking. He likes to say that the spices in his dishes compliment the main ingredient of the dish and not the other way around.

So while people sometimes find the spices in Indian food overpowering, no one feels that way about the fare at Chaikhana. Although customers rave about a number of the dishes at the restaurant, the overwhelming favorite in the reviews appears to be the Chicken Kiryahi. Kamran won’t reveal the exact ingredients of the curry (gravy like sauce) of the dish, but his unique cooking style appears to have many adherents.
